Potato salad in my family was made with either lemon juice or vinegar and olive oil. This easy recipe for lemon-herb potato salad is my favorite. It’s simply dressed with olive oil and lemon juice and seasoned with parsley and scallions. Serve with grilled chicken or beef.
SICILIAN LEMON-HERB POTATO SALAD

Makes 6 servings.
4 pounds gold, white, or red potatoes
5 tablespoons extra-virgin olive oil
1/4 cup lemon juice
2 tablespoons minced flat-leaf parsley
1 scallion, minced
Salt and ground black pepper
Place potatoes in a large pot of salted water and bring to a boil over high heat. Reduce heat to simmer and cook until just tender when pierced with a fork. Drain potatoes in a colander and place under cool running water for 2 minutes. Let potatoes cool. Peel potatoes, cut into cubes, and place into a large bowl. Stir in olive oil, lemon juice, parsley, scallion, and 1 tablespoon water. Season with salt and pepper to taste.
