Easy Rotisserie Chicken Salad with Lemon and Garlic

Try this easy, tangy, lemony, and garlicy chicken salad for a change from your normal mayo-based recipes.  This is a great way to jazz up a store-bought rotisserie chicken or any leftover boiled or roasted chicken on hand.  It makes for a light summer meal and takes 20 minutes to put together at most. 

Easy Rotisserie Chicken Salad with Lemon and Garlic

Makes 4 servings.

1 whole store-bought rotisserie chicken or home roasted chicken (about 4.5 to 5 pounds), skin removed
1/4 cup fresh lemon juice
3 tablespoons extra-virgin olive oil
2 tablespoons minced flat-leaf parsley
2 teaspoons finely minced garlic
1 teaspoon grated lemon zest (optional)
Salt
Black pepper

Directions:
Pull the chicken meat from the bones and discard the bones and cartilage.  Cut the chicken into bite-size pieces (should have 5 to 6 cups of meat) and place in a medium bowl.

In a small bowl, combine the lemon juice, olive oil, parsley, garlic, and lemon zest.  Season with salt and pepper.  Add to the chicken and toss to combine.  Taste and adjust seasonings as desired.   Serve immediately on a bed of lettuce or salad greens.
